Blackened Chicken Won ton Recipe
One of the most popular H'or D's we sell at Gatherings Catering Co are the Blackened Chicken Won tons. Executive Chef & Part owner Ryan Steubing is the creator of this delicious h'or d's! We thought we would share the recipe for this delicious bite sized treat for those of you who want to try something new for a dinner party or just anytime!

Crispy Blackened Chicken Won tons
Serve with flavored sour cream (cilantro lime recommended).
16 ounces boneless chicken breast
3 tablespoons Cajun seasoning
2 tablespoons vegetable oil
1/4 cup scallions, chopped
3 tablespoons fresh cilantro, chopped
1 small jalapeño, finely diced (seeds/white pith removed)
1/4 cup ranch dressing
1/2 cup pepperjack cheese, shredded
1 lime zested and juiced
Pinch of salt and pepper
1 quart vegetable oil (for frying)
1 package wonton wrappers (with at least 30)
Heat a heavy sauté pan, or heavy-bottom skillet until near smoking.
Season both sides of chicken heavily with Cajun seasoning.
Add 2 tablespoons vegetable oil and work around pan. Pound chicken if it is a thick piece. Place in pan and cook 3 to 4 minutes on both sides, or until thermometer reads 165 degrees. Set aside to cool.
Combine all other ingredients except the quart of vegetable oil and won ton wrappers into a bowl and incorporate thoroughly. When chicken is cool enough to handle, dice and mix with the other ingredients.
In a pot with a heavy bottom and high sides, add vegetable oil and bring to 350 degrees on medium/high heat.
Place a won ton wrapper in the center of your hand. Take a pinch of the filling and place in center of the wrapper. Pinch all four corners of wrapper and give it a slight twist. Repeat with other won ton wrappers until filling is gone.
Add won tons a few at a time to the oil; do not overcrowd. Fry 1 to 2 minutes, or until won tons are golden brown. Hint: The top of the won ton is the first to burn, so watch that for signs of over browning. When done, scoop out of pot with slotted spoon and drain on paper towel.
Makes at least 30 won tons.
Cilantro Lime Sour Cream
1 cup sour cream
2 tablespoons chopped cilantro
1 lime zested/juiced
1/4 cup chopped scallion
1 teaspoon chili powder
Pinch cayenne pepper
Salt/pepper to taste
Combine all ingredients together in a bowl and incorporate. Adjust seasonings to your preference of heat. Dip won tons and enjoy.
